INSTANT COFFEE


Coffee is enjoyed by millions of people around the world and its components have been extensively researched.

The sensory experience when consuming a cup of coffee is one of the key aspects of the drink, providing unique aromas, tastes and flavours. The type of coffee, level of roasting and preparation method all impact the overall sensory experience of coffee.

Instant coffee, also known as soluble coffee, coffee crystals and coffee powder, is a beverage derived from brewed coffee beans that enables people to quickly prepare hot coffee by adding hot water to the powder or crystals and stirring. Instant coffee is commercially prepared by either freeze-drying or spray drying, after which it can be rehydrated.

Freeze-drying

In freeze-drying, the coffee extract is frozen to about -40OC and cut into granules. The frozen granules are then dried at low temperature and under vacuum. The quality of the aroma and flavor are protected by the very low temperature and gentle drying conditions.

Spray-drying

In spray-drying the coffee extract is sprayed into a stream of hot air at the top of a tall cylindrical tower. As the droplets fall, they dry, becoming a fine powder by the time they reach the bottom. The powder may then be texturized into granules to facilitate dosage and dissolution. The quality of the aroma and flavor are preserved thank to the very fast drying occurring during this process. Spray-drying is the most commonly used drying process.

The advantages of instant coffee include speed of preparation (instant coffee dissolves quickly in hot water), lower shipping weight and volume than beans or ground coffee (to prepare the same amount of beverage), and long shelf life – though instant coffee can spoil if not kept dry.
